Making Koji and Miso, 2020
Days in lockdown I considered its an opportunity to learn something through online,
I challenged to make a Miso, its fundamental food for my everyday life.
Miso is a well-known traditional Japanese fermented food, produced by fermenting soybeans with KOJI.
Through online lessons, I learned how to make Koji, practice and theory, the theme fermented food is that i’ve studied for last 8 years by myself.
